I have my new favorite I could pass on to you, but it's not true whole wheat :) It's 2 parts bread flour, 1 part whole wheat flour... I'll be watching your feedback to see if someone has a true whole wheat bread recipe that lasts for more than 1 day without crumbling apart! I'd really like one, but haven't found it yet :-/
This is my favorite bread recipe. I usually make the dough in the bread machine and then transfer to a pan b/c the lid on my bread machine doesn't close properly anymore.
1 cup + 2 tbsp warm water (75-85 deg) 1 Tbsp + 1.5 tsp butter 1/4 cup firmly packed light brown sugar (I substitute Honey, and just estimate 1/4 cup) 1 1/4 tsp salt 2 cups whole wheat flour (either the brown wheat or the white whole wheat works well) 1 1/2 cups bread flour (this helps it rise better) 2 1/4 tsp yeast
You can also make it healthier by adding 1/4 - 1/2 cup milled flax seed in place of the same amount of flour. Make sure your flour and flax seed are at room temperature before adding to the bread pan. Otherwise your bread won't rise properly.
I forgot to add you can use all whole wheat flour and no bread flour, just be sure to add extra yeast so it will rise properly - not sure how much, how much I add usually depends on my mood and how much yeast I have left compared to when my next shopping trip is:)
